  • 1 cup whole wheat flour
  • 1/4 cup jaggery powder adjust to taste
  • 3 tbsp ghee melted
  • 1/4 cup milk add as needed
  • 1 tsp turmeric powder haldi
  • 1/2 tsp cinnamon powder
  • 1/4 tsp dry ginger powder saunth
  • 1/8 tsp black pepper powder helps absorb turmeric
  • 1/2 tsp baking powder
  • 1 tsp vanilla extract optional

Method
 

  1. Preheat the oven to 170°C and line a baking tray with parchment paper.
  2. In a mixing bowl, whisk whole wheat flour, turmeric, cinnamon, dry ginger, black pepper, and baking powder.
  3. Add jaggery powder and mix well.
  4. Pour melted ghee and vanilla extract into the dry mix. Start combining with a spoon or hands.
  5. Add milk little by little until the dough comes together. It should be soft, not sticky.
  6. Shape small cookie balls, flatten gently, and place on the tray.
  7. Bake for 12 to 15 minutes until edges turn slightly golden.
  8. Let the cookies cool completely; they firm up as they cool.

Notes

You can swap jaggery with coconut sugar. Add a pinch of cardamom for extra flavour. Store in an airtight jar for 1 week.
