Lauki Raita is a light and cooling Indian yogurt side dish made with grated bottle gourd, perfect for digestion and daily healthy meals.

- Boil the grated lauki for 3 to 4 minutes until it softens. Drain water completely and let it cool.
- Whisk the curd in a mixing bowl until smooth.
- Add the cooled lauki to the curd and mix gently.
- Season with roasted cumin powder, salt, black salt, and red chilli powder.
- Add chopped coriander and mix again. Chill for 15 minutes before serving for the best taste.
Notes
Use thick curd for a creamy texture. Squeeze excess water from lauki for a non-watery raita. Ideal with roti, paratha, or light meals.
