  • 1 large ripe avocado peeled, deseeded and diced
  • 1 medium tomato deseeded and chopped
  • 1 tbsp fresh lime juice approx. half a lime
  • 1 tbsp extra-virgin olive oil optional, for healthy fat and flavour
  • to taste salt
  • to taste black pepper (or red chilli powder) optional heat
  • 2 tbsp fresh coriander (cilantro) finely chopped

Method
 

  1. Wash the tomato and coriander leaves. Peel and deseed the avocado.
  2. Chop the avocado into bite-sized cubes, dice the tomato, and finely chop the coriander leaves.
  3. In a mixing bowl, add avocado, tomato and chopped coriander.
  4. Drizzle lime juice and olive oil (if using) over the chopped ingredients.
  5. Sprinkle salt and black pepper or red chilli powder as per taste.
  6. Gently toss everything so olive oil and lime coat all pieces, without smashing the avocado.
  7. Serve immediately for best taste and freshness.

Notes

Best eaten fresh — avocado tends to turn slightly brown if left for long. If you wish you can add finely chopped onion or a small chopped cucumber for extra crunch.
