  • 1 cup almond flour
  • 1/3 cup vanilla protein powder (any good-quality whey or plant protein)
  • 3 tbsp jaggery powder adjust to taste
  • 2 tbsp ghee melted
  • 3 tbsp milk use only as needed
  • 1/2 tsp baking powder
  • 1/4 tsp cardamom powder optional
  • 1 tbsp chopped almonds for topping

Method
 

  1. Preheat the oven to 170°C and line a baking tray with parchment paper.
  2. In a mixing bowl, add almond flour, protein powder, jaggery powder, baking powder and cardamom. Mix well.
  3. Pour in melted ghee and mix. Add milk gradually and form a soft dough. Do not over-knead.
  4. Shape small cookies using your hands and place them on the tray. Flatten gently and top with chopped almonds.
  5. Bake for 10–12 minutes or until edges turn light golden. Let them cool for 2 minutes before removing.

Notes

These cookies stay fresh for 4 to 5 days in an airtight container. You can swap jaggery with coconut sugar or stevia. For extra protein, add a spoon of peanut butter to the dough.
