  • 1 cup whole wheat flour
  • 1/3 cup jaggery powder prefer fine powder
  • 1/4 cup hemp seeds hulled
  • 3 tbsp coconut oil melted
  • 3 tbsp almond milk or any plant milk
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/8 tsp salt

Method
 

  1. Preheat the oven to 170°C and line a baking tray with parchment paper.
  2. In a mixing bowl, add whole wheat flour, hemp seeds, baking powder, and salt. Mix well.
  3. Add jaggery powder, melted coconut oil, vanilla extract, and almond milk. Combine to form a soft dough.
  4. Scoop small portions and shape into cookies. Place them on the tray and flatten slightly.
  5. Bake for 12–15 minutes until edges turn light golden. Cool completely before storing.

Notes

For crispier cookies, bake 2 minutes extra. For softer cookies, reduce baking by 1 minute.
