
Carrot Rice
This healthy Indian Carrot Rice is a simple, flavourful one-pot meal made with grated carrots, cooked rice, and mild spices. Perfect for a quick lunch or a light dinner.

Method
- Heat oil in a kadhai. Add cumin seeds and let them splutter.
- Add sliced onions and sauté until they turn light golden.
- Mix in ginger-garlic paste and green chilli. Cook for 1 minute.
- Add grated carrot and cook on medium flame for 3 to 4 minutes until slightly soft.
- Sprinkle turmeric, red chilli powder, and salt. Mix well.
- Add cooked rice and gently mix so the spices coat the rice evenly.
- Cook for 2 minutes on low flame. Finish with coriander leaves.
Notes
Use leftover rice for best texture. Add peas or capsicum for extra nutrients.
