
Mexican Corn Salsa (Indian Healthy Version)
A fresh, crunchy and healthy Mexican-style corn salsa made with simple Indian ingredients. Perfect as a side, topping or snack.

- Boil the sweet corn for 2 minutes or until soft. Drain and let it cool.
- Add corn, tomatoes, onions, capsicum and green chilli to a mixing bowl.
- Sprinkle salt and roasted cumin powder. Mix gently.
- Add lemon juice and coriander. Toss everything well.
- Serve fresh as a snack, salad or taco topping.
Notes
For extra flavour, add a pinch of chaat masala or smoked paprika. Tastes best when served immediately.
